The producers in this limestone rich region cultivate predominantly Bourbon and Pacas. Together, they have improved their agronomic practices. They turned to the ambitious vision of Alejandro Valiente, whose family owns Beneficio San Miguel Ingenio, to process their cherry which was depulped, fermented, washed and laid to dry on classic Salvadorian patios.The best patios are typically made of adobe which gently and evenly generates heat to the parchment coffee even for hours after the sun goes down.”
